I like fast meals... ones that are healthy and tasty. Some require preparation ahead of time to be fast, like Jan's wonderful-just-add-water pancakes...
or a dry-mix for cream soup (which made the best alfredo I've EVER had... maybe a separate post to that later)
but one of my favorites takes 5 minutes tops, gives us protein and veggies and warms our bellies.
It's egg drop soup, a la my mission companion Michelle Wilber:
EGG DROP SOUP:
4 c. water
4 tsp chicken boulion
1-2 eggs
2-3 cups frozen veggies (I like the corn, carrot, pea, green and lima bean Western Family variety)
Add the first two ingredients and get to a rolling boil. Whisk egg and slowly pour it in, while whisking the boiling liquid. Add frozen veggies. Done! Tasty, wonderful... and Amy loves to pick the veggies up one by one (I spread them out on a plate).
