Granoooooolllllaaa!

So, when I'm pregnant, I tend to make things a bit difficult in the eats department, especially for my poor hubby, Ryan. I just don't cook... much of anything, or if I do cook, I cook too much of one thing I think sounds super tasty and then ask Ryan to finish off the left-overs so I don't feel guilty for wasting food.

That's been the pos-ish for the past 2 months. Well, I got to feeling bad that I'm not a better "making yummy food" wifey, and that Ryan was having to scrounge for breakfast items and then make his own dinner when he got home, and that Amy was eating too many graham crackers (I'm ashamed). Nausea or not, I was going to make us some food we WOULD eat for breakfast.

1- I made up a pot of oat groats and we ate some every day with frozen berries, milk and a pinch of sugar (Amy loved it).

2- Thanks to Progressive Pioneer, a blog on the right side of my page here, I found a recipe for home-made granola that sounded good and not too complicated, so I made some. I'd include a photo, but we've been eating it too fast. This is what I did:
Her recipe was: 6-8 c. dry ingredients, 1/4-1/2 c. oil, 1/2-3/4 c. sweetner

I used:
5 c. oatmeal
1/2 c. semi-finely chopped almonds
1 1/2 c. Total cereal, smooshed
1 c. coconut flakes

1/4 c. oil
1/2 c. honey
1/4 c. brown sugar, karo syrup, or sugar so that you have a full cup combined of all this oil and sweetner stuff.
1 tsp vanilla
1 pinch salt

Mix all together, thoroughly. Bake at 350 for 15 minutes, stir around, bake another 20 minutes, stir around. Let cool, and add 1 c. craisins and raisins mixed. Amy likes to munch on the big chunks. I was impressed with how easy it was. Granola from the store can sometimes be SO expensive... why not make your own breakfast cereal? I'm happy to report that at least for the past few days, Ryan, Amy and I have eaten breakfast.
