Never Fail Wheat Bread


My Mom makes delicious bread...DELICIOUS!! What I also love about my Mom, is she's not complicated, and I like this recipe because it is straight-forward. It can be made in a bowl, Bosch mixer or other mixer. Makes three dense or huge loaves:

INGREDIENTS:
2 TBSP salt
2 TBSP instant yeast
4 cups warm water
2/3 cup sugar
2/3 cup oil
wheat flour or white flour

I usually scoop the flour out of the bucket with a bowl, so that's how I'm going to give directions.

DIRECTIONS:
Put the warm water and salt into mixer. Add 2 1/2 bowl-fulls of flour. Mix for three minutes and then let the gluten rest for 5 while you measure out other ingredients. Put the other ingredients in and put about 3 more bowl-fulls of flour, watching how it goes.
When the dough pulls cleanly from the side of the mixer and is not too tacky to the touch, pull it out onto a floured counter. Knead it a little and divide in three.
Place in three greased bread pans in a oven turned on warm till the light goes off, then turn the oven off. Leave them alone for 1-3 hours, depending on how high of loaves you want. I usually leave it for 2, but I forgot about it the other day, and it still turned out well.
When it's risen enough, turn the oven to 350 with loaves still in and bake for 25-27 minutes, depending on your oven. Best the first day, hot out of the oven.

I like to add things to this bread: if I do white flour, I add a large handful of oatmeal right at the end before I knead it. I've also added raisins, chopped apples, nuts, put cinnamon and sugar on the bottom of the pan before I put the loaf in, and you could probably add cheese or garlic or whatever.
