Zucchini Cobbler

You know those HUGE zucchini which you get around this time? Why not bag the zucchini bread this time and make an imitation apple cobbler with it? Here's how:

Peel the outer edge off the zucchini. This is easiest if you cut it into three segments and then slice the rind off. Scoop out the seeds and slice into apple slice size. Then follow the following recipe:

8 c. peeled, sliced zucchini
2/3 c. lemon juice
1 c. sugar
tsp cinnamon
1/2 tsp nutmeg

topping:
2 c. oatmeal
2 c. flour
1 c. sugar
1 1/2 c. butter (sliced into the mixture so it's crumbly)
1 tsp cinnamon

I like to lay half the mixture in and top with half the topping and repeat. Bake at 350 for 30-35 minutes, or until the topping has gotten brown and bubbly.

Ryan loved this. Some things I might improvise on would be: substituting half the lemon juice with apple juice or mixing in some actual apples. And putting a handful of coconut flakes into the topping mixture. Hope you like it.
